A seasonal way to get your salsa fix. This recipe is often made in our High School Programs as part of our Food Studies curriculum.
3-4 medium size Badger Flame Beets (or other beet variety enjoyed raw) peeled, chopped into very small dice
1 whole Jalapeño pepper, seeded and finely diced
½ whole purple onion, finely chopped
½ cup fresh cilantro, finely chopped
2 ½ tablespoons lime juice, plus more if needed
Salt to taste
Combine all ingredients in large bowl and mix until lime juice and cilantro coat other vegetables evenly.
Taste salsa and season appropriately with salt. Serve with corn tortilla chips.
