Celery Root Fritters

Celery root fritters


4 cups grated celery root (celeriac)
1/2 onion, finely minced
2 eggs
1/4 cup bread crumbs
1/4 tsp freshly grated nutmeg
1/8 tsp cayenne pepper
salt and pepper
vegetable oil for frying


Grate the celery root on the large holes of a box grater.

In a medium mixing bowl, combine celery root and onion; season with a generous sprinkling of salt and mix well. Allow to sit for 10 minutes, after which time squeeze out all the moisture. Add egg, flour, breadcrumbs, nutmeg and cayenne and mix well.

Heat a medium skillet filled with about ¼ inch oil over medium heat. Form celery root mixture into small flat fritters and fry until golden brown – about 6 minutes per side. Remove from oil and drain on paper towels. Season with salt and pepper.
