Escarole salad


Escarole, blanched if possible
Olive oil
Fresh herbs
Lemon juice
salt and pepper to taste


Really quick sauté of escarole in hot skillet with olive oil. Serve and season with salt, pepper, lemon juice olive oil and fresh herbs.
