Escarole Soup

A soup to showcase this spring green.


  • 1⁄4 pound white beans
  • 5 cups chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons minced garlic
  • 1 small onion
  • 2 cups chopped escarole
  • Salt and pepper

Soak beans overnight in water. Drain, place beans in a pot with broth. Cover and cook medium heat about 30 minutes. Meanwhile, in another pot, add oil, garlic and onion, cook stirring occasionally until onions are soft. Add escarole, continue to cook for about 10 min. Add beans and broth to the pot with the escarole. Add salt and pepper as desired. Cover and simmer for 20 minutes. Serve hot sprinkle with Parmesan cheese.
