Garlic Scape Pesto
2 cups garlic scapes, chopped small
1/3 cup pine nuts
1 1/4 cup grapeseed oil
1/3 cup grated parmesan cheese
1/2 cup basil leaves
salt and pepper to taste
Bring a small pot of well-salted water to a boil. Add scapes and blanch for 45 seconds; throw in the basil leaves for the last 10 seconds. Remove and shock in an ice bath.
Place scapes, pine nuts, cheese and basil in the bowl of a blender. With the blender running, slowly start adding the oil, until it is incorporated and you are left with a pale but bright green puree. Season with salt and pepper.
Toss with your favorite sauteed vegetables or pasta.
