Marinated Peppers Cherry Tomato Salad
1 pint cherry tomatoes
4 Tb extra virgin olive oil
2 Tb sherry vinegar
1 Tb lemon juice
1 Tb raspberry vinegar
1 tsp salt
1/2 tsp freshly ground black pepper
1 small knob of fresh ginger, grated.
With tomatoes fresh and in season from the farm or garden, they need less of a recipe, but a technique for marinating them to make them truly pop. This mixture pairs deliciously with melon, cucumber, peaches and goat cheese and topped with heaps of fresh basil, dill and parsley.
Start by splitting all of your cherry tomatoes and then place them in a bowl.
For one pint of cherry tomatoes, season liberally with the olive oil, vinegars, lemon juice, salt, pepper and ginger. Squeeze the grated ginger to add the fresh juice to marinade.
Let the cherry tomatoes marinate for 10-15 minutes.
Serve in a bowl with accompanying ingredients of your choice.
